Worked to a fine paste and lightly seasoned, they carry the gentle sweetness of pork and a savory depth that suits clear broths, rich soups, and quick stir-fries alike.
Simmer them from frozen in noodle soup, hủ tiếu, or hot pot for five to seven minutes until they float. They drop neatly into congee, braised dishes, and stir-fries with napa or peppers, and a quick pan-sear gives them a golden crust for rice plates and bánh mì. Their mild richness pairs well with garlic and white pepper.
