Myriad Foods Beef Tendon Meatballs

Myriad Foods Beef Tendon Meatballs are all-beef bò viên gân, the textured cousin of the plain beef meatball. Pieces of cooked beef tendon are folded into a deeply savory, springy beef paste, so each bite mixes the firm bounce of the meat with the soft, gelatinous chew of tendon that tendon lovers seek out.

Simmer them from frozen in phở or beef hot pot for five to seven minutes, longer if you want the tendon meltingly soft. They are a standout in bún bò and rich noodle soups, where the tendon gelatin adds body to the broth. Slice them open so the broth works into the tendon.

Pre-cooked and frozen, these meatballs let you portion by the handful and return the rest to the freezer at 0°F. Inside is seasoned beef studded with cooked beef tendon, fuller in flavor and chewier than the chicken-blended tendon version.
