Myriad Foods Beef Tendon & Chicken Meatballs build on a lighter beef-and-chicken base, then fold in pieces of cooked beef tendon for a chewy, gelatinous bite within the springy meatball. The result is a softer, milder ball than all-beef tendon viên, with little pockets of tendon that add a slippery, satisfying texture.
Drop them frozen into phở or a clear noodle soup and simmer five to seven minutes until they float; the broth softens the tendon further. They suit beef hot pot, bún, and curry, where the gelatin enriches the liquid. Halve them so the tendon and broth meet.
These pre-cooked meatballs are individually rounded and frozen, so you cook only what you need and keep the rest at 0°F. Inside is a blend of beef and chicken studded with cooked beef tendon, lighter in flavor than the all-beef tendon version but with the same chewy surprise.
